Sweet Potato Coconut Curry Soup

Makes 1 Serving

-1 small cooked sweet potato (skin removed)
(Bake @ 400 F for 40 mins)
-1/4 Cup Light Coconut Milk
-1/2 Cup Low Sodium Chicken Broth
-1/4 tsp Garam Masala
-1 tsp Curry Powder
-pinch of Cayenne Pepper
-Salt and Pepper to taste

Blend everything in a blender, and re heat on the stove top.

1 serving – 200 Calories, 4g Fat, 27g Carbs,  5g Protein

    You can get Garam Masala at any Indian Food store, or your local whole foods. Actually most supermarkets should carry this in the spice section!
